Soft and Chewy Chocolate Bites


  • 4 squares unsweetened chocolate
  • 3/4 cup butter
  • 2 cups sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 2 cups flour


Preheat oven to 350°F, microwave chocolate and butter in large bowl for 2 minutes or until butter is melted.  Stir until chocolate is melted.  Stir in sugar.  Blend in eggs and vanilla.  Add flour; mix well.  Refrigerate 1 hour or until dough is easy to handle.

Shape dough into one inch balls.  Place 2 inches apart on parchment paper covered baking sheets.

At this point if you choose to decorate your cookies with coloured sugars or small dragees, simply make a slight thumb print on top of the doughball and place decor on top.

Bake 8 minutes, or just until set (do not overbake).  Let stand on baking sheet for one minute, transfer to wire racks.  Cool completely, and enjoy!

Makes about 65 cookies.
